Recipe: Healthy Apple Pie Pancakes


2 ⅓ c. quinoa flour
1/8 c. coconut sugar
1 tbsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. nutmeg
1 ¼ almond milk
1 egg
1 tbsp. olive oil
1 tbsp. vanilla
1 ½ chopped BC apples


1. In medium bowl, combine flour, sugar, powder, salt, cinnamon, nutmeg
2. In separate smaller bowl, combine milk, egg, oil, vanilla
3. Mix together wet and dry, then add apples
4. Grease pan and heat on medium high
5. Add a quarter cup of batter to pan (per pancake) and flip when bubbles appear
6. Serve with greek yogurt, birch syrup, extra chopped apples and cinnamon
