Sushi and fresh-pressed juice aren’t new trends, but a restaurant offering only brown rice sushi and made-to-order juice – that is a great match and rare to find. It is also exactly what Aqua, Sushi + Juice Bar, offers Vancouverites in the Olympic Village area at 1764 Manitoba Street.
“I’ve been wanting to open a restaurant for a while, and it suddenly dawned on me that fresh-pressed juice and sushi can go very well together,” explains Aqua, Sushi + Juice Bar, owner Darren Chung. “Vancouverites are very conscious of eating healthy so I thought why not just have brown rice sushi on the menu? As for the juice part, most quick and smaller sushi places don’t offer too many beverage options. It is also the newest health trend, not to mention delicious. At Aqua, we want people to be able to order sushi and juice together or separately.”
Sushi at Aqua is made with brown rice and with as fresh and local of ingredients as possible. Only wild sockeye salmon and real crabmeat are served in its rolls. Gluten-free options are also available with its low carb menu. Other items include organic miso soup, kale gomae, sashimi, seaweed salad, and brown rice bowls.
There are five fresh-pressed juices on the menu including a thirst quenching concoction of cucumber, pineapple, coconut water, pear and lime, as well as a nourishing mixture of carrots, beets, apples, cucumbers, lemon, and parsley.
“Using fresh and local ingredients was really important to me, especially because that is what I always look for when visiting a restaurant,” adds Chung. “We also wanted to keep the prices affordable. Good, tasty, and healthy food doesn’t have to be expensive. Prices range from $2.50 to $10. Each fresh-pressed juice is $6 for 16oz.”
Aqua, Sushi + Juice Bar, is open seven days a week, from 12 p.m. to 7:30 p.m. The destination is great for people to grab a quick bite while dining-in or for take-out orders.
