I am crazy about butternut squash pizza sauce thanks to this Minimalist Baker veggie pizza recipe. I’d never thought of using another fruit or veg to make pizza sauce, but it makes so much sense. Just roast and puree fruit or veg of choice with a bit of olive oil, garlic and salt. The end result feels heartier than a typical tomato sauce pizza because you’re basically eating half a butternut squash, plus a pizza. You must try it!
As for toppings, I’m not too crazy about broccolini. So instead, I used kale. Just rip leaves off the coarse step and sautee with your chickpeas and onions. The other addition I recently tried on this amazing pizza is sliced black olives (found at the Whole Foods olive bar) – delicious!!
