Creamsicle has got to be one of my favourite flavours of all time…maybe because it’s so nostalgic. That smooth, creamy orange flavour takes me right back to the summers of childhood, eating popsicles at my Granny’s house. Here’s a healthier spin on that old classic, made with unrefined sweeteners, lots of real orange (of course) and zero dairy.
Yields: 3-4 servings
1 can chilled coconut cream (Trader Joe’s version is the creamiest I’ve found – stock up next time you’re down south)
Juice of 2 medium oranges (I used organic navel oranges from spud.ca)
Zest from 1 medium orange
1/4 c. maple syrup
1 tbsp + 1 tsp pure vanilla extract (or feel free to try vanilla bean, to taste)
7 drops Orange Saje Essential Oil (this does add a nice boost of orange flavour, but the recipes will still taste great without it)
- Add all ingredients to a high-powered blender (I use a Vitamix Pro Series 300) and combine until silky smooth.
- Transfer mixture to your ice cream maker (I use this Cuisinart) and follow your machine’s instructions (20 minutes was all it took mine to firm up).
- Garnish with candied or fresh orange wedges.
