To cooking fanatics, there is no greater thrill than discovering a new source for recipe inspiration. Am I right? Thanks to Instagram, I somehow stumbled across The Dreamy Leaf and have since been forming a long list of “recipes to try”. Somewhere near the top of this list was chef Maya’s Vegan Lemon Curd. How could one resist?! I began soaking cashews the minute I read the instructions (you should too…right now!).
Though decadent, this sweet-and-sour, super-creamy, yogurt-like pudding is an amazing, energy-packed breakfast. And granola seemed like a perfect topping. The next step was heading to another of my favourite recipe sites, Minimalist Baker, to choose from Dana’s plethora of granola recipes. Naturally, I chose the Banana Bread Granola. It was perfect.
