Last night in Hawksworth’s chandelier-lit private dining room, 100 TD Aeroplan Infinite Privilege cardholders were treated to a rare, five-course fundraiser dinner menu featuring the talent of four celebrated Vancouver chefs. Fittingly, event proceeds were donated to the Hawksworth Scholarship Foundation, a national non-profit organization dedicated to helping young Canadian chefs get a head start in their careers.
Chefs David Hawksworth (Hawksworth), J-C Poirier (Ask for Luigi, Pourhouse), Lee Cooper (L’Abattoir) and Lucais Syme (Cinara) took turns in the kitchen preparing their respective courses. With wine pairings by Hawksworth Restaurant’s star-studded ‘Sommelier of The Year’ Bryant Mao, each dish truly exploded with flavour…
Here’s Chef J-C Poirier’s Squid Ink Fusilli with octopus ragu, grilled shishito pepper and sweet garlic, which Sommelier Bryant Mao paired beautifully with a BC chardonnay from Foxtrot Vineyards.
Each wine was special — the type of bottle you’d want to pull out for a special occasion. Here’s the full list of featured vintages if you’d like to consider adding to your personal collection:
- 2010 Rippon Riesling Jeunesse, New Zealand
- 2012 Foxtrot Vineyards Chardonnary, Okanagan Valley
- 2013 Elio Grasso Dei Grassi Doletto d’Alba, Italy
- 2012 Clonakilla Hilltops Shiraz, Australia
- 2014 Massolino Moscato d’Asti, Italy
