Until you try banana soft serve at home, I doubt you’d be able to grasp just how creamy and satisfying it is. Sounds “too healthy” to be truly amazing, right? Your high powered blender works wonders with bananas. And you’ll be able to eat a whole “tub” of the stuff without feeling guilty.
~1.5 Bunches bananas (broken into ~2 inch chunks, frozen)
2 Handfuls dates
1/2 c. Walnuts (optional)
Few pinches sea or Himalayan salt
1. Start by making the salted caramel. Soak dates in hot water to soften them, then place in Vitamix. Add salt and a few tablespoons of warm water and blend until smooth. Add more water if necessary. You will have extra caramel (set it aside and enjoy on anything) but you need to make this much for your blender to work (unless you have a mini one that can make small batches…and if you do, please tell me where you got it!)
2. Now, make the soft serve. Add enough frozen banana chunks to your Vitamix so it’s just over half full and be prepared to get physical. You’ll need your tamper and a spatula to stir the soft serve around so that your engine doesn’t overheat and stall on you (how unfortunate would that be?!). You’ll need to stop your machine a few times during the process to stir / unstick the soft serve stuck at the bottom of your blender. Before you know it, you’ll be left with the thickest, creamiest substance that easily doubles as ice cream.
3. Scrape soft serve out of blender and add to a big bowl. Add as much caramel and walnuts as you like, and sprinkle with salt (and maybe some dark chocolate or cacao nibs?). Go seriously above and beyond by serving with coconut whip cream. Enjoy!
