If you’re a regular at the Vancouver Farmers Markets, you know that every means new colourful offerings to the farmers’ tables. Newly in season this February are spinach, beets, apples, cabbage, pears, rosemary, sage, turnips and lots more. I see many beautiful salads in our futures.

Thanks to Sarah of, I recently fell head over heels for this Winter Rainbow Panzanella — the most beautiful salad I’ve ever seen. If you’re lacking inspiration in the kitchen, this one is sure to inspire. It’s pretty as a picture, delicious and healthy. (Sarah’s cookbook is amazing, too!)

One of the best parts about this salad is that you’ve got options. Recipe developer Sarah Britton provides a variety of optional ingredients you can add to your colourful bowl, like sweet potato, brussel sprouts, candy cane beets, kohlrabi, purple potatoes, celeriac…and the list goes on. The base is shredded kale, massaged with salt and olive oil, and the dressing (which I consider the perfect every day dressing) is made simply with olive oil, apple cider vinegar, grainy mustard and dijon.
