Josh Pape, James Iranzad Open Pizzeria on Vancouver’s West Side
Bufala opens its doors for service today at 5395 West Boulevard in the heart of Kerrisdale. From restaurateurs James Iranzad and Josh Pape, the duo behind Vancouver’s award-winning Wildebeest restaurant, Bufala brings Neapolitan-style pizza and classic Italian cocktails to one of Vancouver’s most gastronomically underserved neighbourhoods.
The kitchen, led by Lucas Earthy (Les Faux Bourgeois, La Pentola della Quercia) and Graham Marceau (Wildebeest, Pizzeria Farina), will focus on a line up of 10-12 pizzas available for both immediate consumption and to take away. Recognizable classics like the age-old Margherita will complement playful originals like the Oxtail, featuring braised oxtail, kale, parsley and spicy peppers, while a daily feature will take its cue from seasonally available products. A selection of inventive starters and sides balance out the menu with offerings such as fresh burrata with veal tongue, picked mustard seed and charred scallion; Humboldt squid with eggplant caponata, Calabrian sausage and watercress; and kale caesar salad with crispy ham, breadcrumbs, cured farm egg and grissini. In keeping with the inherent accessibility of the humble pizza pie, products will be sourced from local suppliers including the adjacent weekly Kerrisdale Farmer’s Market, while Marceau—a butcher by trade —will produce all of Bufala’s cured meats, from bacon to bresaola, in house. Flour will be sourced from Saanichton Farm on Vancouver Island, where Pape’s family produces a portion of the wheat.
Boasting a spirited cocktail program by former Vancouver Magazine Bartender of the Year Josh Pape, Bufala will offer a well-rounded selection of both classic Italian and contemporary cocktails, along with quality craft beers and a carefully chosen by-the-glass wine list. Amaro, that often underappreciated Italian herbal digestif, will experience a revival at Bufala where a comprehensive collection will be housed for display and consumption in an understated vintage bar cart.
Designed by Iranzad and Pape, the renovated south-facing corner space, which benefits from an abundance of natural light, simulates the Italian al fresco dining experience with lush olive trees and verdant tones. Checkerboard floors and hanging globe lamps complement a spacious open kitchen. With 55 seats, diners can choose to break bread at Bufala’s 20-seat communal table or more intimately in one of its many banquettes. Those looking for a more theatrical dining experience will enjoy sitting at one of the restaurant’s four bar seats where they can watch the kitchen tossing, saucing, and churning out pizzas.
“Pizza is something Josh and I have always wanted to do,” says co-owner James Iranzad, “We both grew up in Kerrisdale and are keen to share the food we love with the neighbourhood.”
