Hello, fudge foodporn! This nut butter fudge — rich with healthy fats — is one of the delicious, creative snack ideas that holistic nutritionist Carley Mendes shared with participants of Tight Club’s Tight Life program as part of her nutrition guide. I love these dense, mildly sweet squares so much, Carley generously allowed me to share the recipe.
…and they take just five minutes to make, minus the chilling! I recommend doubling or quadrupling the recipe below — otherwise they will disappear way too fast.
1/4 c. coconut oil
1/4 c. almond butter
1/4 c. tahini
1 tsp. cacao powder
1/8 tsp. stevia (or to taste)
1/8 tsp. salt
If the coconut oil is solid, gently melt it over low heat. Mix in the almond butter and tahini. Blend in cacao, stevia, and salt. Scoop mixture into silicone molds and freeze. Once solid, eat straight from the freezer, or let them sit a few minutes to soften. Depending on your climate, these won’t keep at room temperature for long.
