Peach Crumble Breakfast Parfaits

Not going to lie, I’m pretty excited about this one. I’m actually kicking myself for not making something similar sooner…it’s definitely going to become a part of my regular routine (I’ve since tried this with strawberries, too — delish!). I swoon at the thought of peach cobbler and not sure why I never thought to blend a sweet, ripe peach into chia pudding (along with some maple syrup, grilled peaches and crunchy granola). The result is so satisfying and decadent-tasting, yet healthy.

The chia pudding along takes just a couple of minutes to assemble and the peach grilling (which really heightens their amazing, sweet flavour) couldn’t be simpler. Hope this recipe livens up your morning breakfast routine!

PEACH CRUMBLE BREAKFAST PARFAITS

Serves: 2 moderate portions

INGREDIENTS

For the chia pudding:
1 c. non-dairy-milk (almond, soy, coconut, cashew or hemp)
1 ripe peach
¼ c. chia seeds
1-2 tbsp maple syrup

For the grilled peaches:
1 tbsp vegan butter
1 ripe peach
1 tbsp maple syrup (optional)

For the parfait:
½ c. granola (store-bought or homemade)
2 tbsp maple syrup (optional)

DIRECTIONS

  • Make the chia pudding first as it will need at least 20 minutes to set: simply add your non-dairy milk, ripe (pitted) peach and maple syrup to a small blender and puree until smooth. Transfer to a small jar and whisk in the chia seeds. Place in fridge for at least one hour, stirring every five minutes so the chia seeds don’t get clumpy.
  • To grill the peaches, melt your vegan butter in a pan over medium heat, add your sliced ripe peaches and grill until golden (about seven minutes). Drizzle maple syrup onto the peaches if you prefer sweeter.
  • Build your parfait by adding maple syrup to the base of a glass (optional), followed by the peachy chia pudding. Top with grilled peaches and chunks of granola. Enjoy!
