Are you lacking inspiration in the kitchen? In case you don’t already own Plenty, know that it is jam packed with colourful, healthy, rich, hearty, indulgent, and inspiring vegetable recipes. And, the acclaimed London chef and restauranteur Yotam Ottolenghi has just launched a third cookbook: Plenty More.
Plenty is Ottolenghi’s second cookbook — and with whole sections devoted to couscous, mushrooms, pasta, and cereals (to name a few) it will appeal to vegetarians and meat eaters alike.
One of the biggest myths about plant-based diets are that they lack the protein our bodies need. But did you know that almost all foods contain some protein? Green peas, beans and quinoa are three fabulous sources of healthy protein, and you’ll find lots of creative recipes for them in Plenty.
As for my favourite recipes from Yotam’s second cookbook: mixed mushrooms with cinnamon and lemon are fabulous, as are the roasted eggplants with buttermilk sauce and pomegranates.
