Recipe: Butternut Queso with Pickled Jalapenos and Avocado

Queso dip. One of the most sinful of all food sins. Imagine a version you could eat one cup at a time, completely guilt-free.

Well, this is it. Made with vegetables (mainly butternut squash), spices (yes, it’s vegan!) and just a quarter cup of nuts, it’s as light and healthy as dips come. Enjoy topped with diced avocado, pickled jalapenos, chopped tomatoes, black olives and maybe even a little vegan sour cream. The health-conscious folk at your holiday party will thank you.
