When you’re stuck with few ingredients in your cupboard and little time to prepare a treat for guests, popcorn is an easy solution – and there are endless ways to spice it up. Get creative and use whatever you’ve got! Here’s one of my favorites recipes.
1/3 c. popcorn kernels
3 tbsp. oil of choice
1/2 c. unsweetened coconut flakes
1/3 c. melted butter
1/4 c. coconut sugar (or white sugar)
1 ½ tsp. Himalayan salt
1. Heat oil in a large pot.
2. Add kernels and shake pot so kernels are spread out in the oil at bottom of pan.
3. When kernels start to pop, shake pot every 20 seconds or so until you can count ~5 seconds between pops.
4. Remove from heat and toss popcorn in butter.
5. Add sugar, salt and coconut to popcorn and toss with your hands so dry ingredients stick to buttered popcorn.
