The Easiest Blueberry Oat Bars (Vegan)

These healthy blueberry oat bars couldn’t be simpler to make. You start by making the base (which includes all the ingredients you might use in a rich oatmeal breakfast: oats, maple syrup, coconut oil, coconut, vanilla, etc.) and then you load on the blueberries. I prefer frozen (from BC) because of how they thaw and stick to the base. Kudos to Emily Von Euw of for coming up with wonderful recipe! It’s a staple in my kitchen and I eat for breakfast and dessert.
