I’ve got a fabulous new cookbook to tell you about that veggie-lovers will be particularly interested in. It’s called The Forest Feast by Erin Gleeson, a former New Yorker who moved to a cabin in the California Woods in search of inspiration. Boy did she find it. Her new book’s pages are lined with colorful, simple, inspiring recipes — you won’t be able to put it down.
My first day owning her book, I couldn’t resist trying two recipes: the first was an easy Watermelon Salad whose base is simply a circular, inch thick slab of watermelon. Topped with slices of fresh mozzarella, tons of basil and mint and a sprinkling of toasted nuts, I’m calling it the salad of the summer.
The second recipe I tried was Apricot Handpies. All you do is cut your apricots in half, fill the middles with butter and sugar, put the halves back together, wrap with pie dough and bake for forty minutes. To serve, slice in half to reveal the beautiful centre, then top with creme fraiche (or coconut based yogurt) and cinnamon. How fabulous?!
