With years of experience under his belt as an executive chef with Glowbal Group, Josh Wolfe took his culinary skills to the streets of Vancouver two years ago and has been invigorating our city’s lunch scene ever since.
You’ll find his eco-friendly food cart, aptly named Fresh Local Wild, on Hastings near Burrard. Running off vegetable oil alone (they can pour the oil from their deep fryers straight into the tank to fuel the generator), Josh’s eatery features the smallest restaurant patio in the city, seating four people.
The outgoing chef spoke with me about his food philosophies and cooked up a slew of menu items, including the Chicken Fried Oyster Po-Boy and some Local Seafood Chowder Poutine. Oh, and did I mention his food was featured on Food Network’s Diners, Drive-Ins and Dives?
