If there’s an opportunity to get to Seattle for a long weekend or even just one day…I’ll take it. Just two and a half hours from Vancouver, the Pacific Northwest’s Emerald City is bursting with creative dining options — and among them are many worthy plant-based options. And coffee! Seattleites are notorious espresso guzzlers. It’s not a surprise they’ve got a dangerous amount of great options at their fingertips.
