Vegan Blueberry Crumble Bars

I’m all about naturally sweetened, nutritious desserts. But sometimes, the sugary, white, totally-sinful kinds are simply necessary. Enter Blueberry Crumble Bars…

You could make these with a gluten-free flour mix in place of flour…and you could reduce the sugar (and maybe use coconut sugar?). Or, you could be bad like I was and use white flour and all the organic cane sugar. It was a sweet little splurge.

I used Smitten Kitchen’s Blueberry Crumb Bar recipe, which was easy to ‘veganize’. Just substitute coconut oil for butter and chia egg (1 tbsp chia seeds + 3 tbsp water) for chicken egg. I also used a tart pan to create a circular dessert (which we sliced up like a pie) instead of traditional squares.

Hope you agree it’s worth the splurge…
