Vegan Ice Cream Snickers Bars…the most exciting dessert to grace my kitchen in a while thanks to a super simple Minimalist Baker recipe that you absolutely must try. If just one recipe were chosen to disprove negative myths about plant-based dessert recipes…this could be it. It’s really hard to picture anyone not going crazy for these.
One of the best parts about this recipe is how easy they are to make. Dana, the recipe developing goddess behind Minimalist Baker (a collaboration with her website guru hubby, John) loves simple food. Her vast and trustworthy collection of recipes really do prove that less is more. Not one of them lists more than ten ingredients and all I’ve tried are winners.
But back to her incredible frozen Snickers bars…
I don’t own an ice cream maker so skipped the ice cream-making step described in the recipe. Instead, I blended the “ice cream” ingredients together in a Vitamix and then poured that mixture straight into my loaf tin, before popping it in the freezer. They turned out beautifully, so no fear if you don’t own an ice cream maker either.
Other than that, might I suggest doubling the sea salt date caramel recipe? You’ll want extra to add to your oatmeal the next morning.
